This is a blend created by HEAVENSAKE’s assemblage master Regis Camus and the brewmaster of Konishi Brewing Company. With their years of experience and keen senses, they combined sake with different rice polishing ratios, joining the positive aspects of each base sake into something new. “Konishi” Junmai 12’s well-balanced composition delivers a wonderfully savory flavor with nutty notes that end in a bright, fresh finish.

Konishi Brewing Company

Established in 1550, this brewery is, to their knowledge, the oldest brewery in Japan to be owned and managed all by one family. The founder sold medicine, but started making sake on the side. That side business flourished, and the family now uses their 470 years of knowledge to innovate with confidence. From their location in city of Itami, a place of significance for sake during the Edo period (1603-1868), they brewed their brand Shirayuki, which won gold at the World’s Columbian Exposition in Chicago in 1893. Today, they continue what their ancestors started and share it with the world.
