A seasonal gem from Yamagata

This sake uses Dewa no Sato rice from Yamagata, which produces a distinct, “pretty” flavor that locals love. The brewmaster is particularly happy about using the yeast that they’ve isolated from Association No. 7, which often gives off a restrained aroma of banana. Being an unfined “muroka” and a “namazume” only pasteurized once, it brings raw, vibrant flavors to your table. It pairs well with hot pot and meat dishes.

Shindo has been brewing a local but famous brand “Fukutsuru” for the last 10 generations. This new brand “Gasanryu” was invented from an idea of going back to the original. They rebuilt the entire process to make truly authentic sake for sake lovers by taking harvest of rice to brewing all in-house. “Gasanryu” is limited in availability, most of them are only consumed locally.
