With the creation of their state-of-the-art Dassai Blue Sake Brewery in Hyde Park, New York, Asahi Shuzo Co., Ltd. (Dassai) can now craft sake using local, American resources and Japanese techniques. The natural qualities of Hudson Valley water and the careful polishing of the rice to 23% renders a new flagship junmai daiginjo that offers notes of pear, marshmallow and honeysuckle with a touch of minerality.
