DASSAI Blue

In 2023, Dassai Blue Sake Brewery opened in Hyde Park, New York, aiming to make sake a global beverage. Its name comes from a Japanese proverb about the indigo plant, whose dye is bluer than the plant itself. This represents the brewery’s philosophy of creating a Japanese-American sake that goes further and digs deeper than the original, using Hudson Valley water and Arkansas-grown rice. The state-of-the-art brewery features rice polishing and water filtration facilities, and a welcome center for tastings. Their partnership with nearby Culinary Institute of America pursues sake education and food pairing with top-notch cuisine.
