“Hansho” Silver, as opposed to the counterpart Blue, uses the heirloom Omachi sake rice to give the grit, depth and soul inspired by the rock band, along with a clean finish that dissipates into the night. Pairs well with foods with some depth such as reduced sauces and aged cheese. They recommend serving it in a wine glass when chilled, and a ceramic ochoko and tokkuri when warmed.

Who would have thought that a sake brewery founded in 1832 would develop a cutting edge identity hundreds of years later? Tatenokawa’s ambition (achieving 1% rice polishing ratio) and global friendships (Foo Fighters and Phoenix) have gained much attention in the last two decades to go along with a deep respect for their traditional methods and unwavering quality. They even have a playful brand honoring a tabby cat that wandered into their brewery, whom they call Tatenyan. They are one of the few breweries that only produce junmai daiginjo, reaching fans globally with products that will ultimately impress you ultimately with their delicious flavor.
