The taste of timelessness

This handcrafted, traditional sake is modestly filtered and brewed rather slowly — and it’s worth the wait. The gold yellow color draws you in to enjoy its fruity and floral flavors, and a rich umami derived from local Hidahomare rice. All this culminates in a light, dry, almost savory finish. Like a tree adding fresh rings with every year of life, each brewing season brings another batch of “Mukashino Manma.”

Yamada Shoten

Founded in 1868, this brewery is now in its sixth generation under President Kazuhiko Yamada. It also happens to be one of the smallest breweries in Japan, with the brewmaster, Masaki Uno, working almost exclusively by himself. In keeping with tradition, they use no mechanization while brewing, including no temperature control during fermentation. Their tireless efforts produce only one tank a week, but you can be sure the sake is brewed with heart and soul. Yamada Shoten’s brand, Everlasting Roots, is a tribute to the way things used to be.
