Extraordinary effort went into reviving, growing and brewing with the notoriously difficult-to-work-with Soube Wase rice, a strain that hadnt been used for 150 years. Tatenokawa Brewing Company is the only one that brews with it, crafting it into an aged sake with layered complexity and umami from the rice. “Soube Wase” 2022 is literally one of a kind.

Who would have thought that a sake brewery founded in 1832 would develop a cutting edge identity hundreds of years later? Tatenokawa’s ambition (achieving 1% rice polishing ratio) and global friendships (Foo Fighters and Phoenix) have gained much attention in the last two decades to go along with a deep respect for their traditional methods and unwavering quality. They even have a playful brand honoring a tabby cat that wandered into their brewery, whom they call Tatenyan. They are one of the few breweries that only produce junmai daiginjo, reaching fans globally with products that will ultimately impress you ultimately with their delicious flavor.
