With a penchant for extreme rice polishing, Tatenokawa Brewing Company produces some of the world’s most daring sake. After making history with Tatenokawa “Komyo” Dewasansan’s 1% RPR in 2016, the brewery sought the same success with a Yamadanishiki version. The so-called king of sake rice is polished carefully for months, resulting in grains just 1-millimeter in diameter. Yamadanishiki’s inherent richness and sweetness takes on supreme sophistication in this showstopping brew.

Who would have thought that a sake brewery founded in 1832 would develop a cutting edge identity hundreds of years later? Tatenokawa’s ambition (achieving 1% rice polishing ratio) and global friendships (Foo Fighters and Phoenix) have gained much attention in the last two decades to go along with a deep respect for their traditional methods and unwavering quality. They even have a playful brand honoring a tabby cat that wandered into their brewery, whom they call Tatenyan. They are one of the few breweries that only produce junmai daiginjo, reaching fans globally with products that will ultimately impress you ultimately with their delicious flavor.
