The locally grown Tamasakae sake rice is not the easiest to work with, but in the hands of Shichi Hon Yari brewing team it is developed into a smooth, solid brew with a comforting umami on your palate. This particular brew has an upbeat dryness accompanied by hints of tropical fruit, like papaya or banana.
