This “hiyaoroshi” (fall sake) is like autumn in a bottle. Omachi rice and fragrant yeast from Yamagata prefecture create a symphony of seasonal flavors: Dried apple, stewed cherry and pear at the front, hazelnut and warm spices in the middle, and a clean finish at the end. Even with all that flavor swirling about, this junmai ginjo remains as elegant as gently falling autumn leaves.

Shindo has been brewing a local but famous brand “Fukutsuru” for the last 10 generations. This new brand “Gasanryu” was invented from an idea of going back to the original. They rebuilt the entire process to make truly authentic sake for sake lovers by taking harvest of rice to brewing all in-house. “Gasanryu” is limited in availability, most of them are only consumed locally.
