This unpasteurized sake is produced by Marumoto Brewing Company, whose brewery is a national cultural landmark. They grow the Yamadanishiki rice themselves, owning the process from start to finish. “Otoro” refers to a part of a river where the water is deep and the current is slow a nod to this sake’s luxurious, velvety mouthfeel. Vibrant aromas of papaya, cherry and grape lead to juicy notes of fig and cantaloupe.
