Iinuma Honke makes different iterations of Kinoene “Okarakuchi” for each season. This is the summer edition, unpasteurized and undiluted. It balances the tranquil and refreshing qualities you crave this time of year with a full-bodied umami and moderate tartness. Fizziness from lack of pasteurization and a bit of sweetness from the rice ultimately end in the label’s signature dry, sharp finish. Pair it with marinated, simmered, fried or grilled fish.
