Everything is done by hand to ensure the rice is perfectly prepared; washing it bag by bag, and preparing the koji in small batches for the most even result. A time-consuming, free-drip filtration method is used, producing limited quantities of fresh, sharp-tasting sake that is delicate yet deep in flavor. Each bottle features a unique serial number, so you know it’s one-of-a-kind. “Tenku” Yamadanishiki has won gold and platinum awards at International Wine Challenge 2019, Kura Master 2021, and Milan Sake Challenge 2023.
