“Hannya” is a devil formed by agony, resentment and envy; a myth of a young, innocent, beautiful woman betrayed by her husband. She tolerated his infidelity over and over again. Her anger finally took over and transformed her into a dreadful, cold-blooded devil. This version of Ginkobai by Ippongi Kubohonten has a distinct spiciness from hot pepper. It’s a perfect digestif for richly flavored dishes, or for a sensual moment. Drink it on the rocks. As the ice melts, sweetness softens but spiciness lingers.

Ippongi comes from Zen language meaning “supreme truth, a state that achieves the greatest knowledge.” The history of the brewery goes back to 1902. It is located in Fukui prefecture beneath the Mount Haku, the best location for sake brewing with clean water and beautiful rice fields. Their famous “Denshin” brand is brewed differently with seasonality. It literally means “heart-to-heart” because the brewers believe the magic of this sake can help people connect and communicate from the heart.
