François Chartier collaborated with master blender of port wines Dirk Niepoort to create this sake. It’s a blend of seven junmai sake with varying yeast starter methods. The resulting sake has a complex richness of junmai on the palate that emphasizes Niepoort’s signature minerality along with Chartier’s pursuit of fruitiness in sake. Only 1,789 bottles were produced to commemorate the founding year of Tanaka Brewing Company.
