This exclusive set brings together two lively, unpasteurized “nama,” each showing off sake's fresh, effervescent side in its own way. Both open with fresh pear and express different degrees of cloudiness, making for a scintillating side-by-side tasting. With Nito “Omachi 55” Usunigori Nama Sparkling, Maruishi Brewing Company successfully chased two hares at once, capturing both exceptional aroma and rich flavor. A vibrant bouquet of fresh pear and grape leads into a soft, snowfall-like fizz. A subtle astringency like grape skin arrives first with a bit of dryness, then a rich, gorgeous rice sweetness unfolds for exceptional balance. Nabedana Brewing Company's Fudoh “Junmai Ginjo” Origarami exudes a vibrant harmony of sweetness and acidity. Aromas of fresh lychee and pear give way to a pure, freshly pressed juiciness that feels intensely alive, and the rice lees add a slight milkiness. A faint sparkle whispers across the tongue before a clean, crisply refreshing finish. Before you open the Nito bottle

Nito is naturally sparkling — carbonation builds up in the bottle during fermentation, the same way it does in Champagne. Opening it too quickly can cause the cap to pop unexpectedly, and you could lose more than half the bottle’s contents if you’re not ready for it.     Founded in 1689, Chiba prefecture’s Nabedana now embraces a fearless spirit willing to challenge centuries of tradition. By transitioning to an entirely in-house brewing team at the turn of the 21st century, they’ve been able to brew pure, unpasteurized sake that captures the vibrant essence of local rice and medium-hard water. Nabedana doesn’t just preserve their more than 300-year legacy — they continue to enhance it.
