The popular Dassai “50” was replaced by Dassai “45” in 2019 by polishing the rice a bit more. And even though it is the most affordable of their lineup, it belongs to the highest premium sake category with no brewer's alcohol added. They continue to update their recipe to provide exceptional aroma, delicate mouthfeel and flavor year after year — simply a must-try staple for yourself and your friends.

If there ever were a role model for junmai daiginjo, this is it. Dassai “39” is a skillfully balanced sake that strikes a wonderful compromise between Dassai “23” and “45.” It borrows some of the best qualities from each and combines them into a sake with a more subtle aroma, higher acidity, and a creamy texture. The juicy melon note provides the bouquet that fades into a crisp aftertaste.

Dassai challenged themselves to brew the ultimate junmai daiginjo as their flagship product. The result? Dassai “23,” a sake with Yamadanishiki rice polished down to 23%, which is a pretty high polish for a flagship product. Their hard work gives us a sake with an enticing aroma and a honey-esque sweetness that flows over the palate like a gentle waterfall. The aftertaste is clean, leaving you wishing for another sip.

MEET THE BREWERY
Dassai makes one thing only
Founded in Yamaguchi in 1770. When the current chairman took over in 1984, the brewery was close to collapse. It rebuilt around one thing only: junmai daiginjo. Rice is still washed by hand, to within 0.3% moisture.
