A reimagination of one of Japan’s most drinkable sake, this matured version has a nose rich with the scent of plums, cherries and raisins. Carefully aging this sake for over a year brings out the subtle, dry fruit flavor and a fuller body. Still, it retains the smoothness for which this brand is known. It’s surprisingly versatile, complementing fruit, aged cheese, and stewed or simmered meat.
