“Assemblage 6” is as versatile and exploratory as its predecessors, but embodies a greater sense of poise and precision. Utilizing a combination of yeasts, rice strains and reserve sake, this junmai daiginjo delivers a cohesive evolution from nose to finish, balancing complexity with clarity. Pear and plum arrive first, followed by a vegetal brininess akin to nori seaweed. Toasted rice and a buttery mouthfeel end in a long, resonant finish.
