IWA is the sake Richard Geoffroy makes in Toyama. He ran Dom Pérignon for 28 years, left in 2018, and built a brewery in Tateyama with the architect Kengo Kuma.

IWA 5 is sold as numbered Assemblages. Each number is a different blend of separate brews — three rice varieties, five yeast strains — so the number on the bottle tells you which blend is inside. The numbers are not a ranking and not a vintage.

The brewmaster is Masato Yabuta, brewing since 1995 and a specialist in yamahai and kimoto styles.
