Yuki no Mayu “Junmai Daiginjo” Nama

This is the unpasteurized version of the brand’s original, award-winning junmai daiginjo. Skipping pasteurization gives this nigori a more vibrant juiciness, as well as a yogurt-like tang. A hint of grapefruit-like bitterness lingers on the finish. Pair this sake with rich foods such as hamburgers, blue cheese, or decadent desserts like tiramisu. Because it is unpasteurized, enjoy it fresh and keep it refrigerated after opening. About the brewery

Yuki no Mayu “Junmai Ginjo” Nama

Yuki no Mayu translates to “snow cocoon,” referring to the chilly, powdery prefecture of Niigata. Whereas most sake is pasteurized twice, this junmai ginjo has not undergone any pasteurization. This gives the brew a more lively acidity and refreshing taste. But first, enjoy being greeted by sweet aromas of pear and lychee. Serve this nigori young and well-chilled in a wine glass — or even on the rocks! About the brewery

What people are saying about Fresh From Brewery

  • A traditional pressing method called “funagake”

Holy cow, this is amazing. I had to opportunist to try Nama sake when I was in Japan last summer and that was what really got me into sake. There are many amazing sakes out there, but I’ve been searching for something that was as truly amazing as that original Nama sake experience and with that first sip I felt like I was back in the hills outside Takayama. Amazing

  • The process of making koji in the koji room

This was amazing. The freshest, most authentic sake I may ever drink. I shared the first bottle with a friend in a small celebration. We drank it quickly, and a delayed but powerful reaction occurred not long after we finished it, which led us to opening the second bottle right away! It was a great night — thank you.
