This refreshing sake delivers a bright, grapefruit-like acidity. A subtle woody aroma brings an unexpected measure of calm and depth. To achieve the most expressive, tastiest flavor, they don’t use water dilution, charcoal fining or automatic pressing. Additionally, they use a one-step brewing process to give this junmai ginjo a slightly lower ABV, as well as rich aroma and sweetness. It’s a nigori, so mix gently before pouring.

Tucked into Tsunan, one of Japan’s snowiest towns, Naeba Brewing Company has crafted sake since 1907. Led by a 29-year-old brewmaster, it specializes in the rare, labor-intensive “ichidan-jikomi” one-step method to produce lush, vibrant Yuki no Mayu sake.
