For this nigori, the brewery decided to skip the water dilution and charcoal fining steps. They also opted for a one-stage brewing method instead of the usual three-stage method. You’ll experience this unbridled flavor as a rich, melon-like sweetness. There is also some subtle bitterness along with a refreshing quality reminiscent of lemon peel. This junmai daiginjo won gold in its category at the 2024 Monaco Sake Awards.

Tucked into Tsunan, one of Japan’s snowiest towns, Naeba Brewing Company has crafted sake since 1907. Led by a 29-year-old brewmaster, it specializes in the rare, labor-intensive “ichidan-jikomi” one-step method to produce lush, vibrant Yuki no Mayu sake.
