The prestigious Yamagata prefecture-based brewery crafted this sake using rice cultivated by their own research team. They believe they’ve produced a junmai daiginjo that spotlights the deep, citrus-like acidity Miyamanishiki rice has to offer. Still, this sake is well-balanced and easy to drink. It is “nakadori” sake, captured during the middle of pressing, which is the best quality. Despite the work that went into it, it tastes effortlessly elegant.

The story

Founded in 1832, this Yamagata prefecture brewery devoted itself entirely to junmai daiginjo in 2010. Tatenokawa Brewing Company famously polished rice to a world-first 1% for its Komyo bottling and partners with farmers reviving heirloom Shonai grains.
