The aroma is bright and refreshing, which carries through on the palate with a light effervescence. It is juicy, slightly sweet and fruity in a way that evokes fresh, hydrating watermelon. The finish wraps everything up neatly for a refined experience. Interestingly, the flavor of the rice boosts the umami so that this sake is also delicious when warmed, and can even be paired with meat dishes.

The last sake brewery in Kyoto’s Yamashiro region, Joyo Brewing Company has crafted sake since 1895. Guided by the philosophy of “bikan yuso” — appealing to the senses — it pairs ultra-soft underflow water with small-batch, hand-bottled precision.
