A shining prince indeed, this sake has won gold at the U.S. National Sake Appraisal. With a profile that falls somewhere between robust junmai and refined ginjo, Hoyo “Genji” Shining Prince utilizes Kura no Hana sake rice native to Miyagi prefecture. This produces a gentle aroma that leads into flavor with a lemony, citrus start that gives way to a mellow cedar brightness. Pairs well with seared tuna and asparagus.
