ZAO “Junmai Daiginjo” Omachi is crafted from 100% Omachi rice, one of Japan’s most prized heirloom varieties favored for its mellow flavor. Using low-temperature fermentation and the “nakadori” method — which takes the best-quality sake from only the middle portion of the draw — this brew offers a soft, elegant aroma and a refined, smooth flavor. Its gentle, banana-like sweetness is balanced with a clean, layered finish.

The story

Locals once wrote off Zao Brewing Company’s sake as nothing special. To change that, the brewery hired a brewmaster out of retirement to spend four years training one of its own employees, Shinya Otaki for four years. Otaki turned it into a national medalist that keeps improving.
