Tankan Wataribune rice is a parent strain of “the king of sake rice,” Yamadanishiki. It almost went extinct because it’s so difficult to grow, but it was revived in the late-20th century. Brewed with this rice, this sake presents a hint of floral aroma and an initial sweet, juicy flavor. Underneath is some subtle umami and bitterness. Delight in its soft mouthfeel alongside simple Japanese food like broth-simmered root vegetables.
