“Joppari” means “stubborn” in the Tsugaru dialect of western Aomori prefecture. While this brand exudes pride for its local traditions, the light, fruity taste of this sake is anything but difficult. Clean and balanced with notes of mineral and green apple, it’s an excellent fit for light dishes that honor the inherent flavors of the ingredients. It’s the kind of sake you can just keep sipping.

The story

Tracing its roots to 1719 in Hirosaki, Aomori prefecture, Rokka Brewing Company expresses the Tsugaru region’s “joppari” spirit. Its modern Torai brand pairs local rice, Mount Iwaki spring water and Shirakami lactic acid bacteria for a true Aomori terroir.
