The water used to brew this sake comes from Niigata’s venerated Mount Yahiko, and is known for being very soft. Such soft water creates exceptionally clean-tasting sake that feels light and silky. Subtle umami provides depth, like crystal-clear water pooling at the bottom of a spring. This junmai ginjo is one of the most approachable among dry styles. Its delicate flavor pairs beautifully with sushi, sashimi and white fish.
