This indulgent junmai daiginjo is brewed with Hidaminori rice, a rare strain that disappeared in 2005 and was subsequently revived in 2017. Watanabe Brewing Company is the only brewery to use this rice, which they polish to 40% for this limited-production bottle. A pear aroma leads to a sweet but refined taste reminiscent of ripe strawberries. Lingering acidity keeps this fruity sake light and elegant.

Founded in 1870 in Gifu prefecture’s snowy Furukawa Basin, Watanabe Brewing Company operates under the bold mantra “SAKE is Entertainment!” The 150-year-old brewery pairs Hida mountain meltwater and revived heirloom rice with playful, spirited craftsmanship.
