The name Honshuichi is composed of the words Honshu (Japan’s largest island) and “ichi,” meaning “one” — indicating the goal of being the number one brand in the region. This “muroka” (unfined sake) was brewed with international drinkers in mind; by avoiding charcoal fining, the full flavor is better preserved. This junmai has a plump, rounded feel with notes of grain and banana. It won gold at the 2025 Kura Master.

The last sake brewery in Hiroshima’s Aki ward, Umeda Brewing Company is a small, family-run operation founded in 1916. By skipping standard charcoal fining, this three-person team crafts gold-medal “muroka” sake with a vibrant, fruit-forward aroma.
