This junmai is brewed with 100% Omachi rice from Okayama prefecture, where Tsuji Honten is located. Beloved for its earthy, mellow, yet complex flavor profile, Omachi rice was first discovered in Okayama in 1859, hence the name of the bottle. The brewery is so dedicated to this rice strain — and confident in their ability to harness it — they’ve declared, “The future of Omachi is brewed by Gozenshu.”
