This brewery was founded in 1615, but the family’s history goes back further. Once Kyoto nobility, they fled the then-capital during the Ōnin War (1467-1477), changed their family name and resettled in Yamagata prefecture. Their brand Juyondai, meaning “14th generation,” was launched by 15th-generation brewer and president, Akitsuna Takagi, in honor of his father. He created Juyondai when he was just 25 years old. Breaking with the light, dry style that was popular at the time, he crafted a fruity, vibrant, umami-forward style with the highest quality rice. Juyondai is now arguably the most sought-after sake in the world.
