This premium sake is made from 100% Yamadanishiki, considered to be the finest sake rice. Using the “nakadori” method — which takes only the best-quality sake from the middle of the draw — it offers a delicate aroma of melon and lychee, as well as a smooth, balanced flavor. The highly polished rice and pure spring water from the Zao mountains create a clean, refined taste. Sweet yet never overpowering, it finishes with a lingering, enjoyable aftertaste.

The story

Locals once wrote off Zao Brewing Company’s sake as nothing special. To change that, the brewery hired a brewmaster out of retirement to spend four years training one of its own employees, Shinya Otaki for four years. Otaki turned it into a national medalist that keeps improving.
