The number 88 in the name refers to this sake’s polishing ratio. This means the rice was barely polished; only 22% of the grain has been removed. Combined with the approach of using more rice in relation to water for brewing, the inherent flavor of the rice is clear. Made with Iwai rice used exclusively in Kyoto, the taste is full of umami. It’s an ideal match for dashi-based dishes.
