Senkin “Modern” marries traditional techniques with contemporary flavors. The laborious and time-consuming kimoto method is used for brewing, and contributes aromas of pear and melon. The brewery also pursued a wine-like impression with this one, as well as a soft, light finish — characteristics that are popular with today’s drinkers and international audiences. This sake is a wonderful complement to deep-fried seafood, soba noodles and trout meunière.
