Made from Yamadanishiki sake rice milled to 45% RPR, Niwa no Uguisu “45” is the finest of the Niwa no Uguisu line. It is called “Kurougu” in Japan, referring to the black nightingale on the label. It’s worthy of a dressed-up occasion, with a gorgeous aroma and a balanced, lingering finish. To enjoy this foodie sake to the fullest, try pairing it with rich sauces with fruity acids.
