The brewers over at Nakao Brewing Company do something a little different, they use their own original apple yeast, which enhances the fragrance and refines the acidity. This is precisely why Maboroshi gives off any air of easy elegance. The undiluted sake has a lazy citrus that glides through the finely tuned junmai daiginjo flavor, and washes down incredibly smooth.
