This nigori is so saturated with rice lees, it’s as close to “doburoku” (unfiltered sake) as you can get! For such a weighty sake it’s exceptionally silky, and its gentle sweetness finishes rather dry. Hourai “Hida no Dobu” won a gold medal at the National Warm Sake Contest. It’s a certified vegan sake, but if you’re a meat-eater, we recommend pairing it with seared beef.

Founded in 1870 in Gifu prefecture’s snowy Furukawa Basin, Watanabe Brewing Company operates under the bold mantra “SAKE is Entertainment!” The 150-year-old brewery pairs Hida mountain meltwater and revived heirloom rice with playful, spirited craftsmanship.
