With a famous print by Kabukido Enkyo on the label, depicting kabuki character Umeomaru in 1796, this might be the sophisticated junmai daiginjo you were looking for. The brewery uses either Yamadanishiki or their own Hakutsurunishiki for their rice koji, as well as their proprietary yeast, resulting in a silky texture and floral aroma of melon, apple and licorice.
