Thanks to our friends at “Sake Revolution” podcast, we know that the Z on the label expresses five, or the Japanese “go” (perhaps also the kanji 五). There are six sake in the “Five” series, all of which are fermented in large wooden fermentation containers called “kioke,” and made in the orthodox kimoto method. Gokyo “Five” Blue is the refreshing summer version available in limited quantities. Enjoy!
