Unlike a traditional nigori, which gets its rice lees from coarsely filtering the mash, this cloudy-style sake from Brooklyn is crafted by blending junmai sake with “amazake” — a sweet, porridge-like rice drink. This approach adds depth, softness and a creamy mouthfeel. Its rice-forward flavor features bright hints of pear and apple that bring a fresh, fruity lift. It pairs beautifully with spicy dishes like curry or buffalo wings, and rich desserts such as dark chocolate mousse.
