Ozeki’s original Japanese brewery was founded in 1711 in Nada district, Hyogo prefecture, an area that is responsible for producing the most sake in Japan by volume. Over the centuries, Ozeki has become one of the world’s biggest and most well-known sake breweries. Part of their success is no doubt because of their decision to become the first Japanese producer to establish a facility in the United States. In 1979, they began operations in Hollister, California, because of its high-quality locally grown rice and easy access to the clear water from the Sierra Nevada Mountains.
