Nagayama Brewing Company
This Yamaguchi prefecture sake brewery was established in 1887. They grew into a large company with eight locations, but after World War II, the number of breweries in Yamaguchi dramatically decreased. The remaining breweries — including DASSAI, Inc. — resolved to make Yamaguchi sake more renowned nationwide. They began by supporting a network of local rice farmers, who in turn remained invested in producing sake rice despite many challenges. It paid off. Nagayama Brewing Company not only acquired high-quality Yamadanishiki, but revived the difficult-to-grow Kokuryomiyako Kokutou rice strain. Their brand, Yamazaru, translates to “not quitting.” The brewery also produces shochu, wine and beer.
