This Fukushima-based brewery is located in the Aizu Basin, a fertile area surrounded by picturesque mountains and rivers. Abundant spring water saturates the clay-rich soil, providing the rice with desirable moisture and nutrients. In this area, more than one third of the year sees below-freezing temperatures, while the warmer months can reach the high-70s in Fahrenheit. This contrast results in sake with a satisfying depth of flavor. Miyaizumi Meijo has been brewing sake since 1955, using snowmelt water that has seeped into the ground. The business was officially incorporated in 1964. They also produce shochu.
